Ever since I read (listened to) the Sweet Potato Queens Book of Love, I have been dying to try Pig Candy. Well, luckily, I got to try it out first hand at the SPQ Million Queen March Weekend......it was everything I had dreamed it would be. While reading (and listening to, just because it's soooo much more entertaining hearing it all in HRH Queen Boss Jill's own voice) the Sweet Potato Queens Big Ass Cookbook and Financial Planner, I came up with the clever idea of doing a blog just like Julie Powell did with the Julia Childs recipes. So here we go.....follow my progress as I attempt to whip up each of the tried, true and tested recipes loved by the SPQ.

Gooiest Cake in the World!

It was Pops' birthday yesterday, Pops is Harry and he isn't really my Pop......but we call him that non-the-less and he loves it. I offered to make a cake for his b-day gathering and asked his real daughter what he might prefer. After careful consideration I decided on the Gooiest Cake in the World - another fabulous creation that can be found in the Sweet Potato Queens Big Ass Cookbook.
It is a cakey combination of pineapple and coconut and it stands true to its name.....the gooiest cake in the world! You bake part of it then take it out and poke holes in it and then pour the other part all over. I really thought this was going to be sweet, sweet, sweet; but I have to say.....it wasn't too sweet at all, matter of fact it was just right. It was a real crowd pleaser and Pops was flattered that I had taken the time to bake him a cake. I got lucky, there were 2 pieces left that I got to bring home - yeah....I'll be scarfin' that down later :)
